The name refers to Poire Belle-Hélène, a classic French dessert of pear and vanilla. In the classic, the pear gets a chocolate topping; in ours, ripples of salted butter caramel cut through pear and vanilla ice cream. A little lemon makes sure the fruit tastes fresh.
